WHY WE DO WHAT WE DO

There are faster, less expensive ways to make whisky, but we opted for the best way—in traditional Alembic copper pots without plates —an homage to age-old Scottish double distillation methods we learned while apprenticing in Islay, the ancestral home of the peated single malt. The shape of our custom-designed lampshade and onion stills defines the rich character of our whiskies, allowing us to deliver refined, bold flavors with a lingering mouthfeel.


We are a passionate team who thoroughly enjoys crafting whiskies that appeal to both traditional single malt whisky enthusiasts and the whisky-curious— particularly those who gravitate toward refined, complex flavors and a smooth finish. Ours is a grain to glass distillery in Northern California that is grounded in time-honored Scottish traditions as well as the pioneering free spirit that makes the Bay Area a place where new ideas flourish.
